Ok so we are back with a recipe for banana bread, cause we love banana bread soooo much.
And things got a whole lot better when we found this sugar free version online. We have adjusted the recipe a little, but you can find the original recipe at http://www.food.com/recipe/stevia-whole-wheat-banana-bread-97533 Some people added extra banana and another half teaspoon of stevia, I suppose it depends on your taste.
The recipe was quite simple to put together and the bread turned out lovely and moist, it was yummy and didn't last long at tea break time.

So why not give it a try see how easy it can be to replace sugar for stevia. Just bake and enjoy.

Ingredients :1 loaf Units

1/4 cup melted butter or 1/4 cup vegetable oil
1 cup ripe banana, mashed
1 teaspoon vanilla
2 eggs
1/3 cup milk
1 teaspoon stevia liquid or more to taste
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup nuts, chopped(optional)

                                Directions: 1 Preheat oven to 350F and grease a 9x5 loaf pan.
1: Gather your ingredients together.
 
 2: In a large bowl, mix together butter/oil, bananas, vanilla, eggs, milk
and sweet solutions stevia liquid
 
. 3: In a medium bowl, combine the dry ingredients (flour, soda, salt).
 
4: Mix the dry ingredients with the wet ingredients until just combined
 
5: Pour the mixture into the pan and bake for about 1 hour,
or until a toothpick inserted in the center comes out clean.
 
6: Let cool in the pan for a couple minutes to set, then remove from the pan and cool completely on a rack.

 We here at teapotpourri know how hard it is to find everyday food that doesn't have sugar in it, and we too have struggled with sugar addiction. Thankfully, one day a bottle of stevia liquid popped through the post (had to order it from America) that was the start of our health kick journey.

 Next we found green tea, but as many folk out there found, it had a bitter taste. That was when we decided to blend the green tea and stevia together, and low and behold the tea tasted a lot better. So now we have all the benefits of green tea without the bitterness.

In 2011 stevia liquid was finally passed for commercial use in the UK. It wasn't available anywhere in Scotland,  so we decided to make our own stevia liquid, the recipe was tested at Caledonian University and that was how sweet solutions was born.

We know it can be a bit tricky cooking and baking with stevia, but with a wee bit of patience and perseverance it can be incorporated into everyday life, from simply adding it to your daily cuppa to sweetening up plain yoghurts and cold drinks.
So the first recipe we are going to start off with is quite a simple one. And as it's the weekend, which usually means Chinese takeaway time, why not do  sweet and sour sauce to go with any meat and veg you prefer.

You will need:
 
1 teaspoons crushed garlic
1 teaspoon ginger, ground
1/2 cup pineapple juice

juice of 1 lemon 
3 tablespoons white rice vinegar
2 tablespoon tomatoe ketchup
15 drops of sweet solutions stevia or to taste
1 tablespoons cornflour

Gather all your ingredients.

We used a frozen ginger cube, which is the equivalent
of a teaspoon of ginger

combine the garlic, ginger, pineapple juice, lemon juice, vinegar,
ketchup and stevia liquid in a saucepan.

Mix the cornflour with a little water to make a paste

Gradually add it to the saucepan and let the mixture
come to a boil and thicken.
You can add anything else to the sauce like pineapple chunks and peppers.
 
And there you have it, a simple sweet and sour sauce but without the sugar.
